Sticky Paprika Tofu with Pineapple Rice & Steamed Broccoli Stems
Serves: 2 | Prep + Cook Time: ~40 minutes
Ingredients:
Sticky Paprika Tofu:
200g firm tofu
1 tbsp cornflour
1 tbsp oil (for frying)
Sauce:
1 tbsp olive oil
1 tsp smoked paprika
2 tbsp soy sauce
1 tbsp maple syrup
1 tbsp tomato puree
1 garlic clove
1 tsp cornstarch + 1 tbsp cold water
Optional: pinch of chili flakes
Pineapple Fried Rice:
1 cup cooked white or jasmine rice (about 150g)
½ cup chopped pineapple (about 80g)
2 spring onions
1 tsp sesame oil
1 tsp soy sauce
Steamed Broccoli Stems:
Stems from 1 broccoli head (about 100g)
Pinch of salt
Optional: lemon or sesame seeds for garnish
