Sticky Paprika Tofu with Pineapple Rice & Steamed Broccoli Stems

Serves: 2 | Prep + Cook Time: ~40 minutes

Ingredients:

Sticky Paprika Tofu:

  • 200g firm tofu

  • 1 tbsp cornflour

  • 1 tbsp oil (for frying)

  • Sauce:

    • 1 tbsp olive oil

    • 1 tsp smoked paprika

    • 2 tbsp soy sauce

    • 1 tbsp maple syrup

    • 1 tbsp tomato puree

    • 1 garlic clove

    • 1 tsp cornstarch + 1 tbsp cold water

    • Optional: pinch of chili flakes

Pineapple Fried Rice:

  • 1 cup cooked white or jasmine rice (about 150g)

  • ½ cup chopped pineapple (about 80g)

  • 2 spring onions

  • 1 tsp sesame oil

  • 1 tsp soy sauce

Steamed Broccoli Stems:

  • Stems from 1 broccoli head (about 100g)

  • Pinch of salt

  • Optional: lemon or sesame seeds for garnish
